Guacamole

Have an abundance of avocado? Well, then I have the solution. A guacamole works wonders on toast with a fried egg or with Mexican dishes. Try it!

Ingredients

  • Ripe avocados 1-2
  • Juice of 1/2 lime
  • 2 chopped Jalapeño OR 2 tablespoons of crushed red pepper OR 1 tablespoon of cayenne pepper (adjust for spiciness)
  • 1 teaspoon of salt
  • 4 teaspoons of extra virgin olive oil
  • 1 1/2 teaspoon of chopped garlic
  • 1/2 teaspoon of ground black pepper
  • 1 minced jalapeño OR 2 minced serrano chilli OR 2 tablespoon minced of any chilli pepper (adjust for spiciness)

PROCESS

  1. Pit the avocados and score avocado without cutting through the skin.
  2. Scoop out the avocado with a large spoon and place in mixing bowl. Mash with a fork.
  3. Add the lime juice and stir to evenly coat the avocados.
  4. Stir in the garlic, oil, jalapeño, salt, red pepper, and black pepper, mashing and tossing the avocado pieces until thoroughly mixed.
  5. Garnish with a sprig of cilantro.

Note: You can opt to make it more like a pico de gallo with diced pieces of avo, tomato and Spanish onion!

Use immediately for ultimate freshness however, it can be stored for a few days in the fridge in an airtight container (it never lasts that long in our house though!)
